SPINACH, MUSHROOM AND HAM LASAGNA

Spinach, Mushroom and Ham Lasagna
Ingredients
16 large spinach leaves, chopped and steamed
8oz ricotta cheese
2/3 cup shredded cheddar cheese
¼ cup olive oil
1 onion, chopped
2 cloves garlic, crushed
8oz mushrooms
6oz ham, chopped
14 ½-oz can diced tomatoes
1 ½ cups tomato puree
¼ cup chopped fresh basil
9 lasagna noodles
½ cup grated parmesan cheese
1 cup shredded mozzarella cheese

Directions

 

1. In a bowl combine steamed spinach, ricotta and cheddar cheese. Mix well.

   
 
2. In a large skillet heat oil. Cook onion and garlic in hot oil then add chopped mushrooms and ham; cook till mushrooms are tender. Stir in tomatoes and tomato puree for 10-20 minutes.
   
 
3. Meanwhile, cook lasagna till soft and drain.
   
 
4. Spread half of the spinach mixture over the lasagna noodles in a baking pan.
 
5. Top spinach mixture with half of the ham mixture and repeat layers. Sprinkle parmesan on top.
 
6. Cover and bake in a 350 oven for 25 minutes. Uncover and bake 10 minutes more. Sprinkle with mozzarella cheese. Let stand 10 minutes and serve.
