ROMAINE SALAD WITH CHEESE AND WALNUTS

Cooking time: 10 minutes
Serves 4

Romaine Salad w/ Cheese & Walunuts
Ingredients
2 slices white or whole grain bread
2 tbsp butter or margarine
2 slices bacon, chopped
½ head Romaine lettuce
2oz gorgonzola or blue cheese, crumbled
½ cup coarsely chopped walnuts
1 egg
½ cup olive oil
1 tbsp lemon juice
2 canned anchovy fillets, drained
1 teaspoon prepared mustard

Directions

 
1. To make croutons, cook bread cubes in butter or margarine until golden brown.
   
 
2. Cook bacon in skillet till crisp and brown.
   
 
3. Wash and dry lettuce and break it into bite-size pieces.
   
 
4. Combine lettuce with croutons, bacon, cheese, and walnuts; toss well.
   
5. For dressing, gently lower egg into simmering water and cook for 1 minute. Remove from water and crack egg into a food processor or blender container. Add oil, lemon juice, anchovies, and mustard. Cover and process or blend till smooth.
6. Serve immediately.
