PENNE PASTA WITH CREAMY SEAFOOD SAUCE

Serves 6

Penne Pasta w/ Creamy Seafood Sauce
Ingredients
1 pound prawns or large shrimp
12oz white fish fillets
8oz bay scallops
3oz smoked salmon
2 cups chicken broth
6 tbsp butter
1 onion, chopped
1 clove garlic, crushed
3 tbsp all-purpose flour
4 egg yolks
2/3 cup heavy cream
2 teaspoons lemon juice
1 pound penne pasta
1 tbsp chopped fresh basil or 1 teaspoon dried fresh basil leaves

Directions

 

1. Peel and devein prawns, cut fish into cubes, rinse scallops, and slice salmon, add into a boiled chicken broth until tender. Remove from the heat and set aside.

   
 
2. Cook onion and garlic in a melted butter and stir in flour, add chicken broth and stir until reduced by 1/3.
   
 
3. Remove sauce from heat. Slowly stir in egg mixture (egg yolks and lemon juice).
   
 
4. Return to heat; stir over low heat till heated through (do not boil). Place fish, scallop and salmon in a bow. Pour sauce over, stir in basil. Pour over cooked pasta to serve.
