CAULIFLOWER NEAPOLITAN
Preparation time: 15 minutes
Cooking time: 10 minutes
Serves 4
Ingredients
½ head cauliflower
14oz can whole tomatoes
1 tbsp olive oil
1 onion, finely chopped
12 pimiento-stuffed green olives, sliced
2 teaspoons chopped capers
½ teaspoon sugar
Directions
1.
Wash cauliflower and cut into large flowerets.
2.
Strain processed tomatoes through a fine sieve to remove the seeds.
3.
Add sliced olives and capers to tomato sauce.
4.
Add cooked cauliflower to sauce and serve with roasted or grilled meat or as a part of antipasto platter.
