Carpaccio
Ingredients
12 oz beef tenderloin, wrap beef in plastic wrap; place in freezer for 2 hrs
Olive oil
1 small piece (4oz) fresh Parmesan cheese
Fresh ground pepper
Salt (optional)
Lemon wedges

Directions

 
1. Trim beef of any fat. With sharp knife, cut meat into water-thin slices.
   
 
2. Arrange beef slices in a single layer on a serving plate.
   
 
3. Drizzle olive oil evenly over beef slices.
   
 
4. Use a vegetable peeler to shave thin slices of Parmesan over beef.
 
5. To serve; season beef with pepper and lemon wedges.
